FIT FOOD: keepitsimple

Veggie Plate:

I set this out in the afternoon and as my kids stroll by they grab it and snack on it.
It is a helpful way to sneak in Veggies.

Chicken with Avocado:

I bought a rotesserie chicken last week and made this one day out of some of the shredded chicken!
1/2 of an avacado, half a lime, sprinkle of sea salt, a small bunch of cilantro and diced up green onions!
It was delicious.

Canned Tuna in water (rinsed), 1/2 avocado, over Kale with Zucchini Chips
Sprinkled with sea salt.
Roasted Zucchini chips. Peel, slice, toss in Olive oil with a sprinkle of sea salt
and roast in oven at 425 for 10-15 minutes

Wild Caught Salmon and Kale with Carrots:

Salmon Marinade is so easy and delicious.
6 Tbl EVOO, 2 minced garlics, 1 tsp basil, 1 tsp, pepper,
1 tsp Sea Salt (next time I will use a little less),
1 Tbl Lemon Juice, 1 Tbl chopped Parsley.
Let marinate for an hour. After marinating, put fish in Aluminum foil and
cover with marinade and fold sides of foil together.
Cook in pyrex dish 375 for 30 minutes!
Roast kale and penny size cut carrots tossed in Evoo with sprinkle of sea salt 10-15 minutes.

We are trying to incorporate fish into our weekly diet. Any healthy recipes feel free to share!
